Fiona Bruce

Fiona is a co-host at The Fisher King Centre,and the resident Colon Hydrotherapist. Fiona is also a founder member of Ploughshares Ltd. tutor of Healthy Eating and Special Diet Cuisine courses and a Reflexologist.

Fiona will design for you a personalised and practical course in healthy eating: you learn by watching, talking about and preparing food that will motivate and liberate you in the kitchen. 

Fiona's key skills are:

Giving attention to the vitality of food and nutritional understanding, which will supplement culinary skills whether you want to continue to eat meat and fish or become pure vegetarian.

Sharing a new perspective on special diet cuisine to experienced chefs.

Encouraging the natural chef that is in all of us, even those with little or no experience.

Distilling culinary practise into simple and easy to follow formulas which can then be adapted by you for a variety of your favourite foods.

Adapting traditional recipes imaginatively and creatively for dietary needs such as sugar free, wheat free, gluten free, meat and fish free, dairy free etc.

Enabling those of you who have lost confidence in the kitchen to regain your enjoyment for good food.

Managing catering teams and logistics for events and functions
Showing you how shopping for food can be a pleasurable experience and broaden your understanding of alternative and seasonal ingredients.

Fiona’s catering and culinary experience includes:

Mobile outdoor catering, including venues such as WOMAD and European Youth Environment Festival.

Catering for large festival events including catering at Olympia for the National Green Health Show and a five year contract with the Glastonbury Festival, feeding over 3000 covers each day.

Establishing and running of first Vegan High Street Restaurant, which was nominated for Best Vegetarian Restaurant of the Year.  Opening and running three cafes in London.

Research and product development of leaf protein (food for the relief of malnutrition in Third World countries).

Collaborated in the design and launching of the first and only City & Guilds NVQ in non-animal and special diet cuisine.

Featured on Radio 4’s ‘The Food Programme’

Consultancies including work with Liverpool City Council (Raising the Nutritional Status of Young People in Care) resulting in two years teaching young men in a high risk secure unit.

Designing and teaching the Ploughshares Special Diet Courses
Teaching qualified chefs, nutritionists, groups of up to six, single people, parents and children.

Designed and embarked upon commercial in-house training programmes for hotels and cafes .  Fiona is currently working on the creation of Ploughshares Recipe DVD’s as well as designing commercial leaf protein product for project in Nicaragua.

Fiona is an enthusiastic and energetic teacher of healthy eating and special diet cuisine.  The integrity of the ingredients in all her recipes underlies her long-standing ethical approach to food along with an ever-deepening appreciation and understanding of nutrition in the kitchen.  Fiona has always enjoyed the fulfilment and nourishment that food brings to the day on so many levels and she takes great pleasure in sharing this with others.
